들어가세요(Go inside) What do you say when politely ending a phone call? "Goodbye"? "See you soon"?In Korean, there is no specific expression to signal the end of a phone call. This might be why non-native speakers find it rude or annoying when a phone call abruptly ends. While there is no specific analysis of Korean phone etiquette, one answer might lie in the differences between high- and low-context cultures. In high-context cultures, communication relies heavily on nonverbal cues. Much of the information shared is understood through tone of voice, facial expressions, body language, context, and the interpersonal relationship between speakers. In contrast, low-context cultures rely on explicit verbal communication and clear, direct and unambiguous language. In Korea, a high-context culture, a phone conversation is usually over when one speaker says "yes" or "okay" in an exaggerated, drawn-out manner. The prolonged emphasis on the ending vowel sound of "네" is accepted as a signal to hang up.Some Koreans might say "들어가세요" (go inside) to end a call. This likely originated when private phones were rare, and calls were made on public phones outside the home. Thus, "Go inside" became a natural way to end a conversation.<Vocab Spotlight> specific: 명확한abruptly: 갑자기etiquette: 에티켓unambiguous: 모호하지 않은 (※ ambiguous: 모호한)exaggerated: 과장된drawn-out: 오래 끄는prolonged: 장기간emphasis: 강조

Geoscientists set to tackle Earth's biggest challenges The 37th International Geological Congress 2024, one of the biggest science events in the world, will take place from Aug. 25 to 31 at BEXCO in Haeundae-gu District. The IGC brings together geoscientists from around the world to advance fundamental and applied research in Earth sciences. Since the first congress in Paris in 1878, geoscientists have gathered every four years to share ideas on keeping our planet safe and healthy. This marks the first time Korea has hosted the IGC, and the first IGC held in East Asia since 1996. The upcoming event in Busan is meaningful as it will be the first conference in eight years where geoscientists will gather in person; the last IGC in 2020 was held virtually due to the COVID-19 pandemic. Around 3,800 abstracts were submitted, and more than 7,000 participants from 120 countries are expected to join the Busan conference. The gathering scientists are expected to discuss a variety of topics, namely international cooperation in space exploration, nuclear safety, future energy and geotourism.Of particular focus will be the Anthropocene Epoch, an unofficial unit of geologic time that describes the recent period in Earth's history when human activity has had a significant impact on the planet. Scientists will examine how human activity affects Earth's geology, landscape, water, ecosystems and climate, and propose geological-based solutions to saving the planet. During the conference, organizers will present the Busan Declaration, which asks geoscientists to take on a new role in responding to environmental disasters and outlines a collective commitment to advancing geosciences and addressing global challenges. The IGC will offer a variety of programs to visitors who wish to learn more about geoscience. Naturally, since Busan is the City of Film, there will be free movie screenings via the GeoFilm Festival at the Busan Cinema Center between Aug. 26 and 30. Festivalgoers can watch "Ashfall," "Tidal Wave," "The Moon," "Concrete Utopia" and "Pandora." In addition, film directors, cast members and geography experts will visit and talk with audiences. On Aug. 30 and 31, the IGC will host Public Day. Visitors are invited to check out the GeoExpo, a collection of thematic pavilions set up by universities, public organizations and private companies. Bowls of bingsu offer sweet relief and pretty visuals Red bean bingsu is the classic choice for everyone.Green tea's earthy flavor balances bingsu's sweetness.Mango bingsu. The combination of sweet and tart mango with ice flakes that cool your mouth is the ultimate summer dessert. As the weather heats up, foods that cool down are essential to revitalize an exhausted body and mind in a steamy summer. What if the food to make you cooler is airy, fluffy, sweet, and sometimes looks super extravagant? Now it's time to meet shaved ice, called "bingsu" in Korean, the best summer dessert in Busan. From red bean to mango, bingsu evolvesBingsu can be traced back to the Joseon Dynasty (1392-1910). Back then, people in Hanyang, the capital of the Joseon Dynasty located in modern-day Seoul, got ice from the Hangang River in winter and stored it in iceboxes called "seobingo" or "bingo." However, due to the scarcity of iceboxes, seobingo was only accessible to the elite classes. In the summer, nobles would crush the stored ice into small pieces and enjoy it with fruit. After the Japanese colonial era, an ice-making technique was introduced to the Korean Peninsula, and bingsu became widely consumed. In the 1980s, bingsu makers entered the market so people could easily enjoy the summer dessert at home. The classic "patbingsu" features shaved ice topped with sweet red bean, condensed milk and sticky rice cake. These days, it is common to see "nunkkotbingsu" or "snowflake shaved ice." In this case, the shaved ice is milk-based. The resulting ice retains its airy and delicate texture while being rich and creamy, the perfect base for any number of toppings.Speaking of toppings, modern menus have evolved past the basic red bean paste. Seasonal fruits, like kiwis, berries and peaches are popular toppings. Breakfast cereals, cookies and nuts provide a crunchy element. Some cafes offer bingsu flavors that sound like ice cream-chocolate, cookies and cream, green tea or coffee. Some will even top bingsu with other desserts, like ice cream, cheesecake or tiramisu. On the most luxurious end of the bingsu spectrum, bowls of ice are topped with eye-popping amounts of fresh mango. One of the most successful bingsu specialty businesses is Sulbing. Founded as a rice cake shop in Busan in 2010, the franchise now has nearly 500 stores across 16 countries worldwide.Sulbing's rise resulted from the founder Jung Sun-hee's willingness to upend tradition. At her rice cake shop, Siru, she began making nunkkotbingsu topped with "injeolmi," rice cakes coated in roasted grain powder. Instead of the traditional sweet red bean, the roasted grain powder adds a savory element that harmonizes with the slightly sweet milk base.Sulbing also made bingsu a dessert for all seasons by offering seasonal variations. In winter, strawberry bingsu is a top seller. In summer, melon bingsu is popular. In addition, the menu has flavors that are popular throughout the year, including green tea, chocolate brownie and blueberry cheesecake. From neighborhood cafes to specialty stores to luxury hotel restaurants, bowls of bingsu are easy to find citywide. While it is a crowd-pleaser during the summer, bingsu, like ice cream, is best enjoyed in any season.Tip to enjoy bingsu: If the ice and toppings are mixed at the beginning, you might not enjoy the taste until the bottom of the bowl. To enjoy the authentic taste of bingsu, it is recommended to scoop up rather than mix. Eat bingsu roughly from top to bottom, adding layers to your spoon, which means each bite has a different taste depending on the topping you scooped up.Busan bingsu cafes◎SulbingKorean dessert cafe franchise Sulbing offers a wide range of bingsu variations.。Hours: Store hours vary.。Price: ₩9,500 for Injeolmi Sulbing, ₩13,900 for Mango Cheese Sulbing, ₩12,900 for Oreo Chocolate Monster Sulbing. Survive Sambok with bowls of hot soup Besides a whole chicken, garlic, ginseng and jujube are essential to samgyetang. As summer approaches, Koreans are busy checking their calendars.Vacation dates? Not quite. Most Koreans are looking up the "Sambok" dates, the term for the three hottest days of the year, which typically fall between June and August of the lunar calendar.Comparable to the English expression "the dog days of summer," the three Sambok Days are the most uncomfortable, sultry summer days.During the "Chobok," or "First Dog Day;" "Jungbok," or "Middle Dog Day;" and "Malbok," or "Last Dog Day," Korea's average daytime temperatures exceed 33℃, and nighttime temperatures remain above 25℃.Fight fire with fireThis year's Sambok Days fall on July 15, 25 and August 14. To endure the expected heat waves, Koreans will "fight fire with fire" by eating hot soup to fortify themselves against the hot weather. One of the most popular soups for this purpose is "samgyetang," a dish featuring a whole young chicken stuffed with glutinous rice, dates, chestnuts, garlic, ginseng and other medicinal herbs. The nutrient-dense broth and tender meat are believed to invigorate the mind and body and reduce heat-related fatigue. The science of soupThe cultural practice of eating soup during sweltering weather is supported by science. The human body maintains its temperature through sweating, but if a person stays in the heat too long without consuming enough liquids, the body can't cool down properly. Eating hot soup helps by replenishing liquids and inducing sweat, effectively cooling the body and preventing heat-related illnesses.Nutritional benefits of samgyetangSamgyetang is highly nutritious because it contains a whole chicken. One serving provides 96 grams of protein, well over the daily recommended amount of 60 to 70 grams for an adult, according to a 2020 report by the Ministry of Food and Drug Safety. Additionally, ginseng, a key ingredient in samgyetang, contains saponins, believed to decrease blood lipids, lower cancer risks, and reduce blood glucose levels. The soup also provides essential nutrients such as vitamins B, C, and D, folate, potassium, calcium, iron, phosphorus, magnesium, and amino acids. To maximize samgyetang's benefits, consume the broth as many nutritious ingredients dissolve in the soup during cooking. If a whole serving is too much, consider ordering "bangyetang," a half-size portion. Many samgyetang restaurants offer ginseng liquor as an aperitif, which warms the stomach, aids digestion and reduces the soup's greasy taste.Samgyetang restaurants featured in Taste of BusanBae Jong-gwan Dongnae Samgyetang and ginseng liquor.◎ Bae Jong-gwan Dongnae Samgyetang (배종관동래삼계탕)This restaurant serves samgyetang with a generous heap of sliced green onions. Naengmyeon beats the heat Mul-milmyeon and bibim-milmyeon at Gukje Milmyeon.Samsung milmyeon topped with thinly shredded fried eggs. The mul-naengmyeon at Buda Myeonak. The mul-naengmyeon at Damiok. As we head into summer, Koreans' all-time favorite summer dish is in high demand. Typically served in deep and wide brass or stainless steel bowls, naengmyeon consists of a dense nest of noodles immersed in an ice-cold, savory, slightly sweet, tangy beef broth and topped with various proteins and vegetables. Naengmyeon has been a staple in Korean cuisine for centuries. Cold noodles were a local specialty in the northern region dating back to the ancient state of Goryeo (918-1392). The expression "eating cold noodles in broth" is found in the collected literary works of Jang Yu, an important figure and scholar in the 16th century. Records from the Joseon Dynasty (1392-1897) show military officers rewarded with bowls of cold noodles after training. During this long history, naengmyeon has evolved in various ways depending on the type of noodle and accompanying toppings. Broadly speaking, naengmyeon is categorized as "mul-naengmyeon," with noodles served in broth, or "bibim-naengmyeon," with noodles served covered in a sweet and spicy hot pepper paste. However, regional styles may be an even more important distinction. Each region produces naengmyeon with distinct ingredients, textures and flavors. We will look at three: Pyongyang, Hamhung and Busan's "milmyeon." Traditional naengmyeon traces back to two cities in North Korea: Pyongyang, the capital, and Hamhung. Pyongyang naengmyeon is the standard and is considered the forefather of modern mul-naengmyeon. Since buckwheat was a staple crop in the region, this style uses buckwheat noodles served in "dongchimi" broth. Dongchimi is a type of "water kimchi" consisting of radishes, cabbage and other vegetables fermented in a sweet, tangy and refreshing brine. The buckwheat noodles and dongchimi broth are typically garnished with pickled radish, slices of beef, julienned cucumber and half of a hard-boiled egg. For many, Pyongyang naengmyeon's subtle, even bland, taste is the Platonic ideal for a cold noodle dish. Hamhung naengmyeon's signature noodles are made with starch flour, usually potato or sweet potato. The resulting noodles are thin, light-colored and very chewy. Typically, diners cut up the noodles to make them easier to eat. Hamhung naengmyeon is served with similar garnishes, but is traditionally enjoyed bibim-style. The chewy noodles covered in the sweet and spicy sauce are satisfying to a degree other dishes can't match. Milmyeon was born when people from the north fled to Busan to escape the Korean War. These refugees brought their local cuisines to the city. However, the war made obtaining certain ingredients difficult. Buckwheat was plentiful in the north but scarce down south. However, wheat flour was widely available from the food aid provided by the U.S. military. Thus, one of Busan's signature dishes was born. Keeping the basic outlines of the dish, the main difference between milmyeon and naengmyeon is the noodles. Milmyeon noodles consist primarily of wheat flour mixed with starch flour. The resulting noodles lie somewhere between the soft texture and nutty flavor of Pyeongyang-style noodles and thin, chewy Hamhung-style noodles. To get a true taste of Busan, opt for "mul bibim-myeon," and get the best of both worlds. A bowl of tangled noodles, covered in sauce, topped with shredded cucumbers, thin slices of beef, half a hard-boiled egg, maybe a slice of pear and covered with an icy slush of beef broth is the perfect hot-weather meal.■ Michelin Guide Picks◎ Buda Myeonoak (Bib Gourmand selection) Located near Haeundae Beach, this noodle haven offers Pyongyang cold buckwheat noodles made out of 100% buckwheat flour. The broth, made from Korean beef and mixed with vegetable broth, is savory, earthy and mild. The pork, chicken and beef broth tastes pure and non-greasy. The noodles are housemade, and diners can select 100 percent buckwheat noodles, which have a pleasant, nutty flavor.Address: 103, 15 Bokji-ro, Busanjin-gu Hours: Open 11 a.m. to 8 p.m. from Tuesday to Saturday (break time from 3 to 5 p.m.).
